Fattoush Salad

This authentic Lebanese fattoush salad recipe is fresh, crunchy, and packed with bold Middle Eastern flavor. Made with crispy toasted pita bread, crisp romaine lettuce, fresh herbs, and a tangy lemon–sumac dressing, this traditional fattoush is the ultimate refreshing side dish.

Ingredients
  

Salad Base
  • 2 fresh pita breads cut into 1-inch pieces (about 120 g)
  • ¼ cup olive oil 60 ml
  • 1 tbsp za’atar spice blend
  • Pomegranate molasses for drizzling
  • 1 head romaine lettuce chopped
  • 4 large radishes thinly sliced
  • 4 Persian cucumbers diced
  • 1 red bell pepper diced
  • 8 oz cherry tomatoes halved
  • ¼ cup green onion or red onion thinly sliced
  • ¼ cup fresh mint chopped
  • ¼ cup fresh parsley chopped
Fattoush Dressing (Lemon Sumac Dressing)
  • Juice of 1 large lemon about 3 tbsp
  • cup extra virgin olive oil
  • 2 tbsp sumac
  • 1 garlic clove grated
  • 1 tsp pomegranate molasses
  • Salt to taste

Method
 

  1. Whisk or shake all dressing ingredients until emulsified.
  2. Bake chopped pita in olive oil until golden and crisp. Toss with za’atar.
  3. Combine vegetables and herbs in a large bowl.
  4. Add pita, drizzle dressing, and toss well.
  5. Finish with pomegranate molasses and serve immediately.

Notes

  • Use fresh pita for best texture
  • Adjust sumac for more tang
  • Best enjoyed immediately
